Baked Sweet Potato chips with guacamole

Ingredients for Potato Chips

  • 2 Sweet Potatoes

  • 3 - 4 tbs of Fajita Spice Blend

  • Salt

  • Olive Oil

Ingredients for Guacamole

  • 1 Soft Avocado

  • Juice from 1/2 a Lemon

  • 1 Shallot

  • 1 tsp of Olive Oil

  • Salt

Method

Peel the potato and cut it lengthwise into chip shapes. Place raw chips in a big bowl. Add salt, spices and oil, using your hands, rub them into the potato.

Line large baking tray with baking parchment and arrange the chips, making sure they are not touching each other.

Bake them in 190°C (fan assisted oven) for 25 - 30 minutes.

To prepare guacamole, simply place all the ingredients in a blender and mix until smooth and creamy consistency is reached.

Serve as a snack or a side dish.

To make this snack more filling, simply add a source of proteins for example soured cream or grated cheese on top.
