Blueberry muffins

Ingredients

  • 2 1/2 cups of Flour

  • 1 1/2 tsp Baking Powder

  • 1/2 tsp Baking Soda

  • 3/4 cup Golden Caster Sugar

  • pinch of Salt

  • 2 Eggs

  • 115g Melted Butter

  • 1 cup Buttermilk (you can use kefir or labneh water instead)

  • 1 1/2 cup Frozen Blueberries

  • 1 tsp Vanilla Paste

for the Crumble

  • 2 tbs Wholemeal Flour

  • 2 tbs Sugar

  • 80g Softened Butter

  • 12 Muffin Cases


Method

In one bowl mix eggs and buttermilk with a hand whisk.

Mix all dry ingredients separately. Combine them with the liquid mixture. Add melted butter. Mix gently with a wooden spoon. Do not overwork the batter, the ingredients should be just combined and can even form small lumps.

Add frozen blueberries, mix gently.

Ladle the dough into 12 muffin cases.

To prepare crumble use your hands or electric blender. Gently work dry ingredients into soft butter until rough crumbs are formed. sprinkle them on top of muffins.

Bake in 200°C (fan assisted oven) for 20 min.
