Brazil nut and oat cookies
Ingredients
225g Butter, softened
1 cup Rolled Oats
1 1/4 cup Plain Flour
3/4 cup Sugar
1 Egg Yolk
Pinch of Salt
1 tsp Vanilla Paste
1/2 cup chopped Brazil Nuts
1/2 cup Dark chocolate Chips
Method
Place butter and sugar in a bowl and mix using electric whisk. When the mixture becomes pale and fluffy, add vanilla paste, egg yolk and salt.
Add flour and oats. Mix well.
Add chocolate chips and brazil nuts. Mix everything together.
Using your hands, press the mixture together. The dough should not be overworked but it should stick nicely together. Form it into a neat cylinder shape and wrap in the cling film.
Place the dough in a fridge for 30 minutes.
Once chilled, slice the dough into 1cm thick discs. arrange them on the flat tray lined with a baking parchment.
Bake for 12 minutes in 180°C (fan assisted oven).
To make slightly healthier version of these cookies simply don't add chocolate chips and use 1 cup of brazil nuts instead.

Adding oats to cookies makes them more filling. Oats are digested reasonably slowly and sugar present in them is released over longer period of time. They also contain β - glucans which are particularly effective in capturing LDL cholesterol and removing it.
