celeriac, apple and walnut salad

Ingredients

  • Celeriac

  • Walnuts

  • Apple

  • Lettuce

  • Olive Oil

  • Apple Cider Vinegar


Method

Peel the celeriac and grate it using the side with large holes. Wash the apple and dice it. Crush walnuts.

Mix all ingredients together. Drizzle olive oil and just a little bit of vinegar on top.

Serve with bread or as a side dish.


Nutritional information

This salad is great for your heart health. All ingredients are high-fibre foods. Celeriac is very rich in potassium, which helps to regulate blood pressure, and vitamin K, which prevents the build up of Calcium in veins. Walnuts are rich in polyphenols and vitamin E, both of which are powerful antioxidants. Just a handful of walnuts provides a required daily those of Omega-3.

Both celeriac and apple are rich in vitamin C.

If you would like this salad as a main meal I suggest having it with some toast and cheese as extra proteins will keep you full for longer.
