Chicory and Tuna Salad

Ingredients

  • 1 Purple Chicory

  • 1 jar or tin of Tuna

  • a handful of Baby Capers

  • Olive Oil, Lemon Juice and Black Pepper to dress


Method

Start slicing chicory from the bottom, you will get round slices and leaves will fall off easily. Drain the tuna and break into smaller pieces to arrange on top of the salad. Sprinkle baby capers and drizzle oil and lemon juice on top.

Serve with bread or as a side dish.
