Courgette pasta
Ingredients
500g of Cooked Pasta
5 Large Courgettes
1 Fresh Chili Pepper
1 - 2 Garlic Cloves
1/2 Lemon
Olive Oil
Salt
Method
Boil pasta according to the instructions on a package.
Grate courgettes and fry them on a high heat with a little bit of olive oil. Lower the heat once they have lost some of the moisture and start softening. Stir from time to time.
Mince garlic cloves and chop chili pepper. Add them to the courgettes, mix well and add salt for taste.
Keep stirring and cook for a little bit longer.
Mix the pasta and the sauce together, squeeze lemon juice on top, and add a bit more of olive oil if you wish so. You can grate a small amount of lemon peel and incorporate it into the mixture.
It should be served with fish or grated parmesan on top.

Courgettes are fairly rich in vitamin A which bioavailability is improved once courgettes have been cooked.
Use wholegrain pasta if you wish to further increase fibre content. Adding a portion of proteins such as fish or some parmesan will transform it into a fully balanced meal that will keep you full for longer.
