Easy Queen beans

Ingredients

  • 1 Jar of Queen Beans or 500g of Cooked Beans

  • 2 Large Onions

  • 2 Carrots

  • 500 ml of Passata

  • 3 - 4 Sage Leaves

  • Olive Oil and Black Pepper


Method

Peel onions and cut them in half, slice each half thinly (you want thin but large half circles). Peel carrots and slice them into thin discs. Place both in a casserole dish with some olive oil, cover and saute over small heat. Stir from time to time.

Once the vegetables have softened add sage leaves, saute together for a few seconds. Add passata , cover and cook until the sauce reduces in volume and thickens.

Drain beans but do not rinse them. You can add a bit more of olive oil at this point. Cover and simmer for a couple of minutes. Once ready add generous amount of black pepper.

Serve on toast, with pita bread or rice and salad.

This is a great meal for those who avoid meat. Beans are very rich in plant proteins and if you serve them with rice you obtain all of the essential amino acids.

Both tomato sauce and carrots, especially when cooked, are a great source of carotenoids.

This meal is very rich in fibre.

You can easily add more nutrients into this dish by including other vegetables or herbs, for example celery, sweet potato, spring onion or peppers.
