Fig and celeriac salad


Ingredients

  • Celeriac

  • Mixed Salad leaves

  • Fresh Figs

  • Walnuts

  • Olive Oil

  • Balsamic Red Wine Vinegar


Method

Peel and grate the celeriac. Cut figs into quarters. Crash walnuts or just break them into halves.

Mix all the ingredients together, drizzle olive oil and balsamic vinegar on top.

This salad is great for your heart health. All ingredients are high-fibre foods. Celeriac and figs are both rich in Potassium, which helps to regulate blood pressure, and vitamin K, which prevents the build up of Calcium in veins. Walnuts are rich in Polyphenols and vitamin E, both of which are powerful antioxidants. Just a handful of walnuts provides a required daily those of Omega-3.

Figs have been found to promote digestion, relieve constipation and reduction of symptoms of IBS and digestive disorders, all due to the amount and nature of fibre present in them.

If you would like this salad as a main meal I suggest having it with some toast and cheese as extra proteins will keep you full for longer.
