Kefir BreakFAST MUFFINS

Ingredients

  • 2 cups of Plain Flour

  • 1/2 cup of Porridge Oats

  • 1 1/2 tsp of Baking Powder

  • 1/2 tsp of Baking Soda

  • 3/4 cup of Caster Sugar

  • pinch of Salt

  • 2 eggs

  • 1 cup & 1tbs of Kefir

  • 115 g of Melted Butter

  • 1tsp of Vanilla Paste

  • 1 cup of Dark Chocolate Chips

  • 12 Muffin Cases


Method

In a large bowl combine all dry ingredients using a hand whisk or a wooden spoon.

In a separate bowl mix eggs, kefir and vanilla paste using a hand whisk.

Combine everything together, add melted but not hot butter and mix well.

Add chocolate chips at the end and mix.

Place batter in 12 muffin cases, top up with a handful of oats and bake in 200°C (fan assisted oven) for 20 minutes.


Nutrition facts

These muffins are a good choice for someone with a slight lactose sensitivity (not for individuals with lactose intolerance!). Kefir is better tolerated than milk because it contains β-galactosidase the enzyme which breaks lactose down into galactose and glucose (the effect is limited to the lactose present in kefir).

Oats are a great choice for breakfast, as they will fill you up for longer, are digested reasonably slowly and sugar present in them is released over longer period of time. They also contain β - glucans which are particularly effective in capturing LDL cholesterol and removing it.
