Kefir Scones
Ingredients
3 cups Self Rising Flour
3 tbs Sugar
Pinch of Salt
100g Butter
1/2 cup Kefir
1 Egg
1 tsp Vanilla Paste
Method
Place butter in a freezer for about 10 minutes.
Mix dry ingredients in a large bowl.
In another bowl whisk kefir, an egg and vanilla paste until combined.
Remove butter from a freezer and grate it. Add butter to dry ingredients and using your fingers, mix gently.
Add liquid ingredients in and work the dough, using your hands. Do not overwork the dough, scones should be lumpy. Once the mixture stays in one piece and it is possible to make a bowl with it, your dough is ready.
Place the dough on a working surface and roll it until it is 2cm thick. Use a cookie cutter to make little circles.
Preheat an oven to 200°C (fan assisted oven) and bake your scones for 10 - 15 minutes. After that lower the temperature to 180°C and bake them for another 5 minutes.
Serve scones with some clotted cream and jam.
