Lemon curd and poppy seeds cupcakes

Ingredients

  • 180g of Butter, softened

  • 2/3 cup of Caster Sugar

  • 1 cup and 1 tbs of Self-rising Flour

  • 1 tsp of Baking Soda

  • 3 Eggs

  • 3 tbs of Lemon Curd

  • 1 tbs of Poppy Seeds

  • 1/2 Lemon, sliced

Method

All ingredients should be at room temperature.

Place all ingredients in a bowl and mix with an electric whisk until fluffy cake batter is formed. Transfer into 12 cupcake cases and top with lemon slices.

Bake in 180°C (fan assisted oven) for 20 min.

Eggs provide all of the Essential Amino Acids.

Poppy seeds and lemon slices provide a bit of an essential Fibre to support digestion.

Bear in mind that Vitamin C present in lemons gets destroyed during baking process.
