Lemon curd and poppy seeds cupcakes
Ingredients
180g of Butter, softened
2/3 cup of Caster Sugar
1 cup and 1 tbs of Self-rising Flour
1 tsp of Baking Soda
3 Eggs
3 tbs of Lemon Curd
1 tbs of Poppy Seeds
1/2 Lemon, sliced
Method
All ingredients should be at room temperature.
Place all ingredients in a bowl and mix with an electric whisk until fluffy cake batter is formed. Transfer into 12 cupcake cases and top with lemon slices.
Bake in 180°C (fan assisted oven) for 20 min.
