Mango, Avocado and chili salad

Ingredients

  • 1/2 of Cucumber

  • 1 Avocado

  • 1 Mango

  • 1/2 - 1 Fresh Chili Pepper

  • Chives

  • Lemon Juice and just a drop of Olive Oil to dress


Method

Cut the cucumber, avocado and mango into small cubes. Chop the chili pepper thinly. Mix everything together.

Squeeze some lemon juice on top to prevent avocado from browning. You may drizzle some olive oil on top but it is not required.

Garnish with chopped chive.

Serve with wholegrain bread or rice.
