Marrow and Chickpeas medley
Ingredients
1 Large Onion
1 Marrow
1 jar of Chickpeas (660g, including broth)
3 - 4 Garlic Cloves
1/2 tsp Dried Chili Flakes
1 tsp Sweet Paprika
5 - 8 Gherkins
1 - 2 tbs Olive oil

Method
Rough chop the onions. Place them in a saute pan with some olive oil and gently cook until slightly soft.
Cut the marrow into long quarters then slice them into 1 1/2 - 2cm thick chunks. You can remove the seeds if they are big and the pulp around them is becoming liquid.
Add marrow chunks, chopped garlic and the spices into the onions. Saute gently for 1 minute over a medium heat.
Reduce the heat, cover the pan. Cook for about 10 minutes, stirring from time to time.
Once the marrow has cooked through, add chickpeas with its broth. Cook for another 5 minutes.
Slice gherkins and add them to the medley in the last minute of cooking. Mix well.
Serve with brown rice or bread.

Note, you should never eat marrow if it tastes bitter. Bitterness in this family of vegetables, usually present in seeds, comes from cucurbitacins, potentially harmful toxins.
This dish makes an excellent, nutrient rich dinner for vegans and vegetarians. Chickpeas are especially good for those who avoid meat and meat products because they are the second (after soya) most rich plant source of amino acids and a good source on non-heme Iron.
Sweet marrow is rich in Folate, Potassium and Pro vitamin A.
