Pak choi and orange salad

Ingredients

  • Pak Choi (also known as bok choi)

  • Orange/s

  • Unsalted Pistachios

  • Fresh Dill

  • Olive Oil

  • Sea Salt Flakes

  • Juice from 1/2 of Orange


Method

Wash and roughly chop a pak choi. Peel an orange, cut it in half and slice each half. If the orange you are using is particularly big then cut it into quarters before slicing. Place in a bowl and mix.

Gently crush pistachios. Wash and chop dill. Add both to your salad.

To make a dressing, squeeze some orange juice into olive oil and mix. Drizzle on top of the salad. Sprinkle some sea salt flakes on top.

Enjoy as a side dish.
