rich man's strawberry cake

Ingredients

  • 6 Eggs

  • 220g Butter (softened)

  • 2/3 cup Sugar

  • 2 cups Self Rising Flour

  • 1 tsp Vanilla Paste

  • 2 tsp Lemon Juice

  • 500g Fresh Strawberries

  • Pearl Sugar (for decoration)


Method

Separate egg whites from egg yolks. Using electric whisk, beat egg yolks with sugar until pale and fluffy. Add butter and whisk until well incorporated. Add flour, lemon juice and vanilla and mix really well.

In a separate bowl, using electric whisk, beat the egg whites until they, at least , triple in volume and reach a firm foam texture.

Using wooden spoon or the lowest setting on your whisk, very gently mix the egg white foam into the cake batter.

Line rectangular baking tray (23 x 30 cm) with a baking parchment and pour the cake batter in.

Wash strawberries and slice them into 3 mm thick pieces. Arrange them on top of the cake and sprinkle pearl sugar on top.

Bake in 180°C (fan assisted oven) for 45 to 50 minutes.

Other fruit that can be used with this recipe, include cherries, small plums or raspberries.

This cake is rich in proteins. From all foods available, eggs have the highest biological value for humans, they contain all of the Essential Amino Acids. Proteins fill you up and keep you fuller for longer.

Strawberries provide a small amount of Fibre which supports digestion and prevents the build up of LDL cholesterol (the bad one).

Due to high fat content this cake is for healthy individuals. The recipe is relatively low in sugar.

To make slightly healthier version of this cake just add more fruit or use a couple of different kind of fruit.
