Strawberry and avocado salad
Ingredients
Rocket Leaves
Avocado
Strawberries
Pistachios (shelled but not salted)
Lemon Juice
Olive Oil
Method
Arrange rocket leaves on the base of a plate/bowl.
Remove green leaves/stalks from strawberries and cut the fruit in quarters.
Cut avocado in half, remove the stone and, using a tablespoon, scoop up the pulp and slice it.
Crush pistachios very lightly in pestle and mortar or in an electric blender.
Arrange the fruit on top of rocket leaves, sprinkle nuts on top. Squeeze a little bit of lemon juice (to prevent avocado from browning) and drizzle olive oil on top.
Serve with bread or as a side dish.
