Tzatziki with Gherkins
Ingredients
500g Natural Yoghurt
1/2 Large Cucumber
6 - 10 Gherkins (depending on their size)
1 tbs Olive Oil
4 Garlic Cloves
Small Bunch of Dill
Salt
Salt, Pepper and Olive Oil to garnish
Method
Grate the cucumber.
Place a sieve over a colander and transfer the cucumber there. Salt generously and leave for, at least, 10 minutes. In that time most of water should separate and run down.
Chop the garlic and gherkins very thinly. If gherkins you are using are reasonably big, you can grate them.
In order to get rid of some more water, lightly press the grated cucumber with a tablespoon,
In a bowl, mix together garlic and gherkins with olive oil.
Chop some dill and mix all ingredients together.
Drizzle olive oil on top and add salt and pepper to taste if necessary.
Serve with pita bread, grilled vegetables or as a sauce with fish or meat.
