Watercress and gorgonzola risotto
Ingredients
2 Large Onions
250g of Arborio Risotto Rice
150g of Fresh Watercress
Vegetable Stock
100g of Gorgonzola
2 tbs of Olive Oil
Black Pepper
Method
Chop onions and saute them in olive oil. Once soft, add dry rice and mix well. Wait for rice to warm up and absorb some of the oil.
Pour some of the hot broth in and add roughly chopped watercress into the rice. Mix well. Cook on medium heat for exactly 20 minutes, adding hot broth gradually and mixing continuously.
Add gorgonzola 2 minutes before the end. Mix well.
Season with black pepper.

Watercress has anti-carcinogenic properties. It contains Phytochemicals which has been shown to help to prevent colon, lung, prostate and skin cancers. It is also very rich in Vitamin K, which is essential for blood clotting.
Raw watercress is also rich in Vitamin C, it is a good idea to keep some of the raw leaves to use as a garnish.
Be mindful, gorgonzola contains a lot of fat. If you are trying to lose or control your body weight simply use less cheese in this recipe.
