White Crab and Pea Salad

Ingredients

  • Pea Shoots

  • Young Sweet Peas

  • Cucumber

  • White Crab Meat

  • 1 Chili Pepper

  • Lemon Juice

  • Olive Oil

  • Salt and Pepper


Method

Peel and slice the cucumber.

In a bowl place Pea shoots, opened young peas, cucumber slices and crab meat.

Mix some olive oil and lemon juice with thinly chopped chili pepper and pour it over the salad. Season to taste and mix well.

Pea sprouts and young peas are super rich in Folic Acid, Vitamin C and Iron.

Crab meat is rich in Omega 3, Vitamin B12 and Zinc. It is also a good source of lean protein. Eating Crab meat and shellfish in general can be very beneficial for your brain and immune system. Men and especially teenage boys require more Zinc than women because it is used in a production of sperm.

People experiencing IBS symptoms should be careful with consumption of fresh peas and pea shoots as it has been observed to cause some irritation in to the bowel in some people.
