Labneh
Ingredients
500ml of Natural Yoghurt
1 tsp of Sea Salt
50g of Sesame Seeds
1/2 tsp of Za'atar
1 tsp of Olive Oil
Cheese Cloth
Method
Mix yoghurt with sea salt. Place a sieve on top of a bowl and spread the cheese cloth over it. Pour the yoghurt mixture in. Lift the corners of the cheese cloth and twist or tie them, enclosing the mixture tightly inside it. Cover with a plate and leave to stand for a minimum 2 hours.
To prepare the dressing, place sesame seeds, za'atar and a bit of olive oil on a pan and toss it gently for a few seconds. spread on top of the labneh.
Serve with bread and salad.
The liquid obtained from making labneh can be used in baking to substitute buttermilk or milk or you can simply drink it.
