Strawberry salad with labneh

Ingredients

  • Rocket Leaves

  • Fresh Sweet Strawberries

  • Labneh

  • Pine Nuts

  • Olive Oil and Balsamic Vinegar to dress

Place pine nuts on a pan over a gentle heat. Toast them until golden brown. Scoop up labneh pieces and, with your hands, shape them into little balls, not bigger then 2 - 3 cm in diameter. Roll them in pine nuts. Pine kernels should stick easily to the cheese and form a thick, crunchy skin.

Remove green leaves/stalks from strawberries and cut the fruit in quarters.

Arrange rocket leaves on the base of a plate/bowl, followed by strawberries and labneh balls. Drizzle olive oil and balsamic vinegar on top.

Serve with bread or as a side dish.

You can substitute labneh with soft goats cheese.

This salad is a great choice for people with diabetes. Strawberries have a low GI (glycaemic index). Both pine nuts and rocket leaves are advised to be consumed to keep blood sugar levels stable due to the right balance of fibre, fats and proteins present in them. Magnesium present in pine nuts and Manganese which is abundant in rocket leaves improve insulin's ability to uptake glucose.

It is also beneficial for your brain. Strawberries, among other berries, have been observed to help to prevent dementia and to generally support your brain health and so do Omega-3 acids present in pine nuts.

Both rocket leaves and strawberries are a good sources of Vitamin C, which helps Iron absorption, supports your immune system and your skin health. They are full of other Antioxidants and are a good source of Fibre.
