Seared asparagus
Ingredients
200g Thin Young and Fresh Asparagus
2 tbs Red Wine Vinegar
1 tbs Olive Oil
Black Pepper
Method
Use very young and thin asparagus when making this recipe, thicker and older ones tend to be too tough and usually need to be boiled.
Warm up a pan. Throw in asparagus, followed by olive oil. Cover and leave them cooking on a medium heat for a maximum of 2 minutes. During that time, uncover the pan a few times and stir asparagus.
Add red wine vinegar (do not use reduced, thicker version). Cover and cook for another minute or until asparagus are lightly tender but still crispy.
Season with black pepper.

Asparagus are very nutritious, they are rich in Vitamin A, K and Folate. Bear in mind some of Vitamin C gets destroyed during searing process, however you still preserve more of it if you don't boil asparagus. They are also rich in Fibre and low in Calories.
Asparagus can help to lower high blood pressure due to certain Favonoids (antioxidants) and Anthocyanins (powerful pigments) present in them and good levels of Potassium.
Vinegar has been found to help in lowering blood sugar levels and it tends to lower GI (glycaemic index) of foods eaten alongside it.
