seared asparagus and egg salad
Ingredients
100g of Seared Asparagus
100g of Lambs Lettuce
1 Egg
1 Spring Onion
Salt and Pepper

To poach an egg simply boil some water and stir it, crack an egg in and let it cook for 2 - 3 minutes. Using skimmer or perforated spoon, lift the egg up, hold it above a pot for a couple of seconds to let the extra water run down.
Place lambs lettuce on a bottom of a plate followed by seared asparagus. Place the egg on top, in the middle. Garnish with thinly chopped spring onion and black pepper. You can drizzle some olive oil on top and season to your taste.
Serve with bread or grains.
